    Instant Pot Pulled Pork with Creamy Paprika Sauce

    This Instant Pot Pulled Pork with Creamy Paprika Sauce is so tender, full of flavour and even has a dairy-free sauce that is finger-licking good, you won't want to stop eating it.

    After removing the pork to shred, I blend some of the juices left in the pot with cashews and more paprika (thank you Quirky Cooking for the inspiration!) and I ended with the creamiest sauce to go (rather well) with my pulled pork.

    You'll only need a tiny bit of the sauce as it is quite filling so it'll go a long way.

    Pulled pork is extremely easy in the pressure cooker. Put your feet up while your Instant Pot does all the hard work. Recipe with UK ingredients and measurements

    Equipment

    • 1 Pressure Cooker Instant Pot, Ninja etc

    Ingredients
      

    • 1.66 kg shoulder of pork mine was from Aldi, don't worry if yours isn't exactly the same size, the timings are the same
    • 2 teaspoons Maldon salt or your favourite salt
    • 1 tablespoon paprika sweet or smoked
    • 250 ml of homemade chicken stock or you could use my vegetable stock paste

    For the Sauce

    • 250 ml liquid left from cooking so, basically, don't throw it away!
    • 120 g raw cashews
    • 1 teaspoon smoked paprika or sweet if you don't want it spicy

    Instructions
     

    • Remove the rind and cut the pork shoulder in about 5 pieces, not too big and definitely not too small.
      1.66 kg shoulder of pork
    • Mix the 2 teaspoons of salt with the 1 tablespoon sweet paprika and rub all over each piece.
      2 teaspoons Maldon salt, 1 tablespoon paprika
    • Place the 250 ml chicken stock in the inner pot of the Instant Pot (pressure cooker) with the pork shoulder pieces.

    • Lock the lid in. Steam release sealed. Pressure cook on high pressure for 90 minutes. Natural pressure release at the end (see notes if you don't know what this means)

    The Sauce

    • Blend 250 ml of the juices (you will have more than this) with the 120 g raw cashews and 1 teaspoon paprika until you have a creamy sauce (in Thermomix: 1 minute, speed 9).

    *Terminology
    Quick release (also known as quick pressure release or QPR) means venting the steam as soon as the pressure cooking process finishes.
    Natural release (also known as natural pressure release or QPR) means letting the float valve pop back down of its own accord, if it takes over 15 minutes, you’re ok to release the rest of the steam (by turning the steam release handle to Venting) that may be left in order to unlock and open the lid.
