Delicious Thermomix Watercress Soup Recipe. Don't have a Thermomix? You can make it in your Soup Maker, of course.
Whatever model of Thermomix you have, you can easily make this soup.
The flavour is light and delicate and I fully recommend it as a variation on heavier soups.

Thermomix Watercress Soup
Equipment
- 1 Thermomix any model, or you could use a Soup Maker of course
Ingredients
- 100 g watercress washed
- 250 g leek washed and cut in small chunks
- 30 g unsalted butter for the next one I reckon I will use 20 g olive oil
- 100 g potato peeled and cubed in smallish chunks
- 500 g water I added it straight from the tap and it was fine
- 150 g semi-skimmed milk or milk of your choice
- A few twists of the pepper mill I think I forgot to add it
- 1 teaspoon vegetable stock powder or vegetable stock paste
- 25 g soft cheese (cream cheese), basically one large dollop
Instructions
- Place the 100 g watercress in the bowl: 3 seconds, speed 7. Remove and reserve.
- Place the 250 g leek and 30 g unsalted butter in the bowl: 5 minutes, Varoma, speed 1.
- Add the 100 g potato, 500 g water, 150 g semi-skimmed milk, A few twists of the pepper mill and 1 teaspoon vegetable stock powder: 20 minutes, 100ºC, speed 1.
- Add the 25 g soft cheese, let it cool down a bit with the lid open then do: 1 minute at progressive speed 5-10, by this I mean move gradually from speed 5 to 10 rather than going straight for 10. Enjoy!
