Avocado, lime and coriander are a match made in heaven, the seafood sticks (surimi) are added because I have been having these Avocado and Seafood Stick Cups for decades, but they are not a must!

Seafood sticks, crab sticks or surimi are easy to find in most supermarkets, from Tesco to Sainsbury's and even Aldi. You could replace them with prawns or even with feta and fresh, chopped red chilli, more suggestions in the recipe.
This is the kind of "cooking" that I did for decades, many would say it doesn't qualify as cooking but I reckon it does! 😉 Or at least it qualifies as preparation of food.
They are great as an appetiser or a as snack. The recipe makes two cups so you can eat the whole thing or share with a friend or loved one... if you must.

Avocado and Seafood Stick Cups
Ingredients
- 1 large avocado
- 4 seafood / surimi sticks 2 per avocado half
- ½ lime
- Fresh coriander to taste
Instructions
- Scoop the avocado flesh onto a board or plate, chop (but do not mash), slice and then quickly do a chopping action over the seafood sticks so that it shreds a bit (I mean, if you can be bothered, you can just slice and be done with it).
- Now start mixing the seafood sticks with the avocado flesh, adding squeezes of the lime as you go.
- Chop and add the coriander, mix well with a gentle chopping action.
- Scoop the mix back into the avocado shells and serve.
- Note: other ingredients I would try adding to this base, in no particular order, are: chopped feta cheese and freshly chopped red chilli, boiled egg, chopped spring onion, a couple of drops of tabasco. You can also replace the lime with lemon and a touch of smoked paprika goes really well.
